Ingredients for Banana Protein Bake (8 servings):

  • 4 scoops of vanilla whey protein powder.
  • 100g butter.
  • 2 bananas (1 sliced).
  • 100g self-raising flour.
  • 2 large eggs.
  • 2 tablespoon of semi-skimmed milk.
  • 1 tablespoon of Stevia or Truvia.
  • 1 teaspoon of vanilla extract.
  • 2 teaspoon of ground cinnamon.

Method 1 – Quickest (Microwave):

  • Place butter in a baking dish, place in microwave for 30 seconds (until melted). Mash 1 banana in to the butter.
  • Add milk, protein powder, flour, eggs, Truvia/Stevia, vanilla extract and cinnamon and mix together well.
  • Place the other sliced banana over the top of the mix. Place in microwave, cook for 8 minutes until the bake has risen and is fully cooked through.
  • Remove from microwave, allow to cool and cut into 8 portions.
  • Due to the moderate amount of carbs this is ideal after a workout.

Method 2 (Oven):

  • Pre-heat oven to 190°C.
  • Place butter in a baking dish, place in oven for 30 seconds / until melted.
  • Remove baking dish and mash 1 banana into the butter.
  • Now add: milk, protein powder, flour, eggs, Truvia/ Stevia, vanilla extract and cinnamon and mix together.
  • Place other sliced banana over the top of the mix. Place back in the oven and bake for approx. 8-10 minutes until the bake has risen and is cooked right through (check the moistness by inserting a skewer – bake should not be dry but not overly wet either).
  • Remove from oven, allow to cool and cut into 8 portions.
  • Due to the moderate amount of carbs this is ideal after a workout.
