Prawn Chilli Stir Fry

This recipe serves 2 people

 Ingredients for Prawn Chilli Stir Fry:

  • 250g raw and peeled jumbo prawns
  • 6 spring onions
  • 3cm cube of fresh ginger
  • 1-2 cloves of fresh garlic
  • Selection of fresh raw vegetables such as:
    1 Pepper
    1 Courgette
    Half a Carrot
    1 head of broccoli
    Bag of fresh bean sprouts
    Pak choi
  • 1 teaspoon chilli powder (or to taste)
  • 1 tablespoon of coconut oil / vegetable oil
  • 2 tablespoons of soy sauce

Method for Prawn Chilli Stir Fry:

  • Wash, peel, top and tail spring onions and chop across in roughly half centimetre slices
  • Peel and finely chop the ginger (or grate if you prefer)
  • Peel and crush the garlic
  • Wash, core and slice appropriate vegetables eg peppers, pak choi
  • Wash, peel and cut appropriate vegetables into thick matchsticks eg carrot, courgettes
  • Wash and split broccoli into florets
  • Open packet of bean sprouts
  • Put all above to one side ready to use
  • Warm two serving bowls
  • Heat oil in a wok until hot – it should sizzle when a piece of veg is dropped in. (The oil is less likely to soak into the food if it is this hot)
  • Add denser veg first eg broccoli, carrots and courgettes to the oil, stir fry for 3 minutes
  • Add Spring onions, pepper and prawns and stir fry for a further minute
  • Add garlic, ginger, chilli powder and stir fry for another minute
  • Add soy sauce, bean sprouts and pak choi and stir fry for another minute or until the prawns are completely pink
  • Serve immediately in the warmed bowls.

Tip: Cubes of cooked chicken may be substituted for the prawns at the same stage in the above method.
