Chilli Con Carne Healthy Recipe

Lean Beef Chilli Con Carne Healthy Recipe :

  • 500g lean minced beef
  • 1 large onion chopped
  • 1 tin of kidney beans – drain and then rinse in sieve
  • As much garlic as you would like – crushed, chopped or granules
  • 2 tins tomatoes (preferably chopped)
  • 2 heaped teaspoons ground cumin
  • ½ – 1 teaspoon ground chilli powder (depending on how ‘kick ass’ you like it!)
  • Salt and pepper to taste.


  • 1 cup of water
  • 1 cup of wholegrain rice.



  • Bring water to a rolling boil in a medium sized saucepan
  • Put 1 cup of rice in sieve, rinse under running cold water and drain
  • Add rinsed rice to the pan, bring back to a rolling boil, turn heat right down as low as possible and put on lid
  • Let rice steam until all water has been absorbed and rice is tender.

Lean Beef Chilli Con Carne Healthy Recipe:

  • Gently fry the onion in a little olive oil until soft and translucent
  • Add lean beef mince and brown off
  • Add garlic, stir and cook for a minute or two
  • Add the cumin and chilli powder, stir and cook for a minute
  • Add both tins of tomatoes, bring to the boil and simmer for 5-10 minutes
  • Add salt and pepper to taste
  • Add kidney beans
  • Simmer until rice is ready and then serve.


Tip: If using just one portion – both rice and chilli can be frozen once cooled down. Divide one portion per plastic tub of both chilli and rice so you have a complete meal in one. When needed, allow to defrost and reheat in a microwave for about 2 minutes (check power output and recommend re-heat time for the particular microwave oven).
